Truffle Mac and Cheese

Whenever I see Macaroni and Cheese on a menu my heart leaps and I cannot resist ordering one for the table to share.  Since Christmas is a time to indulge more than any, what better than the most luxurious macaroni and cheese there is – one with the added rich flavour of truffles. It’s so naughty, but so good!

When truffles aren’t in season, what I like to do when making my own Mac and Cheese is to use truffle oil and add some mushrooms to give a grown-up touch to a family favourite.


Truffle Mac and Cheese

Prep Time: 10 mins  |   Serves: 4


  • A glug of olive oil
  • 1 large tbsp. of butter
  • 3 tbsp. plain flour
  • 1/2 tbsp. English mustard
  • 1 garlic clove, crushed
  • 500ml whole milk
  • 100g strong cheddar cheese
  • 100g parmesan cheese
  • 100g porcini mushrooms
  • 2 tbsp. truffle oil
  • 300g macaroni pasta


  1. Preheat the oven to 200C
  2. Rehydrate the mushrooms, perhaps in advance, and dry them and finely chop
  3. In a pan, cook the mushrooms and garlic in olive oil, remove from the heat and stir in the truffle oil
  4. Cook the macaroni in boiling salted water for just under the recommended cooking time, as it will continue to cook in the sauce once it is in the oven
  5. In another pan, melt the butter and stir in the flour. Keep stirring it until the flour is cooked through and then slowly add the milk, whisking all the time.
  6. Add the English mustard and season with salt and pepper, then add the grated cheeses which should melt into the milk and flour and form a delicious rich cheesy sauce.
  7. Cook the sauce for a moment until the sauce thickens, but I don’t like it to get too thick as after it comes out of the oven it is best when the sauce is not too dry, and still has an oozing consistency.
  8. Mix the cheesy sauce into the pasta with the mushroom and truffle oil mixture
  9. Pour into an oven proof dish and top with more grated parmesan
  10. Cook in the oven till the cheese on top has melted, is golden brown and bubbling, which should be around 5-7 minutes
